January 2021 personal challenge

 Trying to pick a challenge when the month has already started is such a bad idea.

You have to pick on that you are will to cover 2 days of each day until you are caught up to where you are in that month.

So scrolling through Pinterest for what seemed like forever, likely only 20 minutes, I managed to find some for next month I want to try and in the end, found one I was willing to give a go for this month.

I don't like the title of this one " 31 days of adulting challenge" because it implies that we are not adults if we don't do these things already. I figure for most of the things on this list that isn't the case at all. What actually is the case is that we are all very busy people and a lot of these things we don't put at the top of our priority list. Some of the things on this might even be things that you do all the time. For me the washing your sheets one I do that EVERY week, all the sheets, blankets and pillowcases get washed in this house every week. Retirement plan, that has never been on my list because I have always had more important things to do, even though in my early 20's I promised I would set something up.

What are some of the things on this list that you do all the time? What are some that are never on your to-do list?

A few things on the list I might change to better fit my personality be bold, not really my thing and how on earth am I going to be bold in a lockdown. That one I will change to try a food you have never tried before!

Chocolate covered strawberry brownies

YUM is one word for it. Easy is another.

I found a bunch of pinterest recipes I wanted to try with the strawberries I got on the farm that were different than my normal go to recipes.

This one was the first one I tried and its quick, simple, the kids and men loved it. I didn't like it.

What you need:

2 12oz bags of chocolate chips (I only used 1 bag)
1 box of brownie mix (this might be why I didn't like them, I like my homemade mix better)
1 egg (or whatever the mix tells you)
1/4 cup of oil or whatever the mix tells you
1/4 cup of water or whatever the mix tells you
1/3 cup milk (I don't measure this I just use a bit in with the chocolate to make it melt)

Directions:

1) Preheat oven to 350°

2) Grease and line your pan

3) Mix your brownie batter as per the instructions on the box

4) Bake as per the instructions on the box

While the brownies bake:

5) Quarter or half your strawberries

6)  Melt your chocolate and milk together in a double broiler or heavy sauce pan on the stove.

Once brownies are baked:

7) Put strawberries on top of brownies

8) Evenly pour melted chocolate on brownies

9) Place in freezer for about 20 mins. Frozen squares are easier to cut.

10) Remove from pan and cut into equal squares

Enjoy!!!

Now I am not sure why I didn't like them but the kids loved them and so did the men. It made enough for dessert last night and some to freeze for later.

Meal Planning

The children are adapting to our new schedule perfectly. Now comes the meal planning.

I hang our weekly menu on the wall in the kitchen each week so EVERY one can see it. If I am not here for whatever reason and another adult needs to make lunch or a snack they easily know what to make without any extra thoughts.

With things the way they are right now we make sure we buy everything for 2 weeks so all we have to go out for is fruit each week. It limits our time exposed to others who may be sick. The children don't get to go shopping with us right now which is sad for them but they are little and the touch EVERYTHING.

I normally meal plan dinners for the entire month but now with all four children home I meal plan, breakfast, snack, lunch, snack, dinner, snack. They eat on average every 2 hours so there is no reason to snack in between those. This way I know exactly what to buy and how much to buy to last the full 2 weeks without running out.

The program I use is like excel by open office  

One night a week (normally Tuesdays) we order from a local restaurant who is offering pick or delivery at this time. This is to help support local business stay alive during this very stressful period. I know it may not seem like much but its important for us to help limit the changes in business that we will see when this is all over.

Most of my recipes come from Pinterest or ones that I have used for years and have become go to favourites!

Pinterest try: Philly Cheese-steak Sliders

Trying new recipes is one of my favourite things to do, and when they turn out amazing it is even better and I just have to share with everyone so they can try too.

This week I tired out Philly Cheese-Steak Sliders. I have never tried a real Philly cheese-steak so I really have nothing to compare to but Connely said they were good and he likes Philly cheese-steaks.

This is a super simple recipe to so that is another big win. I think total time including cooking was 30 mins.




What you need:

1 pepper (I used red because that is what I had on hand)
1/2 med onion (I only used half because I am not a huge fan of overwhelming onion taste)
3/4lbs steak (I used the thin quick fry steaks)
Dinner rolls (I used what the superstore had on hand in their bakery section 12 buns)
Mayo
1 cup shredded I used Mozzarella but the recipe calls for provolone.
Garlic
Butter



Recipe:

1) Preheat oven to 350 degrees

2) Cut up peppers, onions and steak. Shred the cheese

3) Cook in frying pan until everything is nicely browned

4) Cut your buns in half and lay the bottom halves in your baking dish

5) Put Mayo on both halves of your buns

6) Spread your mixture evenly over your buns. Spread the shredded cheese over the mixture.

7) Melt your butter and mix with garlic. Brush on top of your buns.

8) Cover with tin foil bake for 10 mins. Uncover. Bake for another 10mins

New recipe chicken and gravy

A rut....when it comes to dinners I get stuck in the same rut month after month, I try not to make the same thing twice in a month but each monthly meal plan contains the same things over and over again. I always want to try new recipes and I “PIN” tons of them on Pinterest but normally I don't get around to trying them because they “look” hard or I am not sure they will turn out etc.

Well I have decided to try a new one at least each month, either from one of my many PINS or from one of my millions of cook books.

The first one of have tried so far was from Pinterest and I had been meaning to try it for months but I kept forgetting to get cream of chicken soup or I would worry about putting the chicken in frozen. I do not thaw my meat in the microwave EVER!

Well I decided the other day to give it a go I was stuck for a meal, it was a bad pain day and I didn't get it in until 10am and yes the chicken was frozen. Of course the instructions said 7 hours on low, well that just isn't going to work over here as we eat at about 430 so here we go I will cook it on med, and worse case it doesn't turn out and we have left overs from the freezer.

The recipe calls for:
2 packages of chicken gravy
1 can of cream of chicken soup
pepper
1 ¾ cup of water
Chicken breasts (I used thinner cuts of chicken so it cut my cook time)
Next time I will add a box of that stuffing mix I think it will help out the recipe a lot.

Mix everything expect the chicken together in a bowl until its semi not lumpy
Put chicken in crock pot
**put stuffing in at this point too**
cover in this mix
cook on low for 7 hours
***I cooked on Med for 4.5 hours***

I served with potatoes and mixed veggies.


I didn't get photos oops, it turned out pretty good but like I said next time I will add the box of stuffing to give it that little bit of extra. Everyone else approved except Blaine who didn't touch it.

Pinterest! Coconut Banana bread









I made a few changes when I made this which I will mention as we go along. This is a good recipe although not my favourite.

Blaine helped me out with making it, he loves to be in the kitchen cooking, baking and just being helpful, still can't get him to touch anything with his hands but thats okay. Everything in its own time.

Ingredients:

1/2 vanilla yogurt
1 egg
3 over ripe banana's
3 tablespoons of vegetable oil. (I used canola oil and I only had 2.5 tablespoons left in the bottle lol)
1 1/3 cup of flour
1/2 cup of sugar
1 teaspoon of baking soda
1/4 teaspoon if salt (I forgot to add this oops)
1/2 chopped pecans (I used 1/4 cup)
1/2 coconut (I only had unsweetened and I used 1/4 cup)
(I added 1/4 cup of mini chocolate chips)

Preheat your oven to 350 (I do mine at 325 because my oven runs hot)
Grease a 9*5 loaf pan (I sprayed mine with pam)

In a bowl mash the banana's
Mix in the vanilla yogurt, egg, oil

In a separate bowl mix all your dry stuff.

Combine both bowls together until moist but don't over mix.

(I put all the wet stuff in my kitchen aid mixer, then I slowly added the dry stuff until it was all mixed)





Topping:
3 tablespoons of flour
3 tablespoons of brown sugar
3 tablespoons of butter
3 tablespoons of coconut
3 tablespoons of chopped pecans

make into a crumble in a bowl

(This didn't work for me, it turned into a paste so I said screw it and added quick oats until it turned into a crumble)

Bake in the oven for 55-65 mins (Mine took 75 mins because I was doing it at lower temp so it wouldn't burn)

Pinterest!!! Jalapeño popper dip!

I have tired this recipe before and loved it, not sure why I didn't blog about it back them.

This is a must try recipe, let is cool a little bit before eating it. It is also super simple for those OMG I need to bring something for the pot luck moments. It takes about 30 minutes start to finish

Recipe:

1 jar of jalapenos drained and rinsed and chopped.
1 brick of cream cheese soft
1 cup of sour cream
2 cups shredded cheddar cheese
3/4 cup of shredded parm cheese (I didn't have this so I used mozzarella just as good!)

Topping:
4 table spoons butter (melted)
1 cup bread crumbs (I used seasoned because that is what I happened to have on hand)
1 cup shredded parm cheese (I didn't have this so I used the stuff in the can you put on pasta)


Simple directions:

Preheat oven to 350 degrees

Mix all 5 top ingredients in a bowl until well combined. Spread in a 9*13 casserole dish (I used my round one because it was what I had right there)

Mix the next 3 ingredients in a bowl and until crumbled. Spread over the top of the dip.

Place in oven for 15-20 mins

Let cool

Pinterest: Sloppy Joe Sliders




I hate most things in a can, I hate most things I don't make from scratch because well when I make it from scratch I know what is going into it and it doesn't taste like the can. Connely has been requesting for WEEKS for sloppy joes because I have a can of it in the cupboard and I kept telling not unless I make it from scratch. Well I happened upon a cute recipe for MINI (Who doesn't love mini things) Sloppy Joes.

The recipe calls for:
  • 1 pound lean ground beef
  • 1/2 cup diced white onion
  • 1/2 cup seeded and diced green bell pepper
  • 1 8 ounce can tomato sauce (This is the only thing I use in a can because I do not can my own sauce anymore)
  • 1/2 cup ketchup
  • 2 teaspoons Worcestershire sauce
  • 2 teaspoons prepared yellow mustard
  • 2 teaspoons brown sugar
  • 1 teaspoon cumin (I couldn't find mine so I just left it out)
  • 1 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon crushed red pepper or to taste (optional)
  • fresh ground black pepper to taste
  • 12 slider buns I used King's Hawaiian Savory Butter Rolls (I used fresh bakery butter mini buns)
  • 1-1/2 cups shredded cheese (I used marble because that is what I had on hand)
  • 2 tablespoons butter melted
  • 1 tablespoon sesame seeds or as needed (I didn't use these because I didn't have any)

    To say the buns I picked made this recipe is an understatement OMG the buttery taste mixed with the sloppy Joe taste was like heaven and this recipe is super simple and QUICK!!!

    This will be 100% added to my favorites list and it should be added to your must try list!

Homeschool Week 1 THE PLAN

We are not following a homeschool curriculum right now. We are taking a little bit from each one that I think he will enjoy and trying it out. If he likes and it works, great, if not then we move onto something else.

This is my plan, do I see it going forward 100% not a chance because 1) he is having surgery on the 4th of Sept. 2) He is a 4year old and 3) Well life with a child who has SPD, OCD, Anxiety and low on the spectrum means nothing goes to plan 100% of the time.
As long as Blaine is feeling better the goal is to start Sept 10th.

I have broken all of the learning down into months, weeks and days.

This is what week one looks like:

Day 1:
Sight word "I", a page in his workbook, colour mixing and his journal. Plus our outing which today will be Kids Cook
Sight word activity is cards I made on card stock, cut out and laminated.
The work book we are using right now is called Pre K Learning Essentials
Colour mixing requires 6 containers, paper towel, water and Red, Blue, Yellow food colouring!

Kids cook this is program put on for 3-6 year olds by the EarlyON Centres. We have never been before so it should be a lot of fun!!!

Day 2:
Sight word I, Workbook, Rainbow Craft and we will be book club and Nature walk.

The sight work activity for today I found on google which I will include at the bottom of the blog.

Book Club for 4-6 year olds is put on the EarlyON Centres. 
The Nature Scavenger hunt/walk it is for 0-6 years and is put on by St. Clair child and youth centre.  

Day 3:
Sight word I, workbook, colour train and After School Discovery Fun for 3-6 year olds.
Sight word activity is the same as day one but with different small words paired "I DO" etc

The colour train idea came from of course Pinterest.


After School Discovery Fun for 3-6 year olds is put on by the EarlyOn Centres and a play based program to explore and experience the natural world. 

Day 4:
Sight word I, work book colour scavenger hunt and we will be doing the weekly shopping.
This letter I activity is a work sheet that I found on google. I will include it at the bottom of the blog post.

Colour Scavenger hunt is another idea I found of course on pinterest. We will being doing it during a neighborhood walk with the dogs. 


Weekly Shopping doesn't sound much like an outing but it is an important one. He helps me read my list, find the items that we need, helps me pay, bag and the learning from shopping is limitless.

Day 5:
Sight work I, work book, I can sign a rainbow felt board activity, the outing will be play group.
I used different I and small word cards IE "May I, Can I"

Once again Pinterest to the rescue for this colour activity!!! I can sing a rainbow, I cut circles of the colours from felt as we sing the song he will find the colour and put it on the felt bored.





Then it is the weekend and there is no "school" on the weekend!

I store everything in a binder. 1 binder per month. The big stuff is put into those mini totes and labeled with the week on it. Everything is precut and ready to go so there is no panic or stress. Inside my binder I have folders and freezer bags with the paper things that are cut inside them so they don't get ruined.


My "I" Sight word cards. Once I get to the parent centre they will be all cut and laminated.

Each day have the plan on piece of lined paper at the start of that day.

Lemon, Garlic, Herb Cod

I have been cooking healthy and I decided to try a new fish recipe instead of my normal go to.

There is a few things I changed because I forgot to buy them at the store and well I just wasn't going all the way back with a cranky 3 year old.

In the future there are a few things I would do differently.

Ingredients

  • 1 tablespoons olive oil
  • 1 cup whole wheat panko breadcrumbs (regular panko or plain breadcrumbs will work in a pinch)
  • 1/3 cup full-fat Greek yogurt
  • 3 tablespoons Parmesan cheese, grated
  • 1⁄4 cup fresh parsley, chopped
  • 1/4 cup fresh basil, chopped
  • 2 -3 garlic cloves, grated or finely minced
  • 1 large lemon, juice and zest, divided
  • 3⁄4 teaspoon fine sea salt, more if needed (adjust according to taste)
  • 1/2 teaspoon paprika
  • 1/4 teaspoon black pepper
  • 4 (8 ounce) Alaskan Cod fillets
Pre heat your oven to 350/400 depending on your oven I do mine at 350 because my oven runs hot.
Line your baking pans with tin foil. Saves huge on clean up and scrubbing.
So you put the first 2 ingredients in a small bowl mix them up well.
In a second bigger bowl add the next 9 ingredients mix them well
Spoon the yogurt mixture onto the fish then pat the crumbs on top.
Stick it in the oven for 15-20mins.
Then eat!

Pinterest! Mozzarella Sticks

Who doesn't love bar food? I know personally I love those platters you can get with all sorts of different things on it such as potato wedges and wings. Sigh such great tasting food, far too much deep fried crap.

I was craving amazing Mozzarella sticks like no other and I also had crescent rolls in the fridge that needed to be used before they expired. I have no idea why I buy them we have never eaten them before, but every time they go on for a dollar I "have" buy them. Most end up just getting tossed so this time I decided why not give the Mozzarella sticks a try that use the rolls to cover them.

This is a super simple recipe even can be done with the help from the wee ones.

This is my simplified version of the recipe, below it you will find the link to full recipe if you require lots of detailed instructions

What you need:

Tube of crescent rolls
Mozzarella cheese strings
Pizza Sauce
Butter
Italian seasoning

What to do:

Set your oven to 375. I set mine to 350 because it always runs hot and then everything burns
Put parchment on you cookie sheet, saves on a ton on scrubbing.
Cut your cheese strings, I got 4 pieces from each cheese string
Open your tube hopefully without scaring the crap out of yourself, thankfully mine didn't do that giant POP
Melt your butter and add your spices to the butter
Put a bit of pizza sauce on each triangle dough piece. Now here I cut my triangles in half because I am not a huge fan of a lot of dough.
Roll your cheese up in the dough
Put them on your cookie sheet, put a bit of the butter sauce on them
Toss them in the oven for about 13 mins.

Household Chore List

There are 3 adults, 1 toddler and 2 dogs living in my home at the moment. I am complaining that I am the only one who does anything around here. Richard say's I don't tell Len what needs to be done and they both seem to be what is considered the typical male who can't see a mess when it needs to be cleaned up. I tend to be a problem fixer and I found a great solution to this seemingly huge problem.

I made a reusable Chore list, I hung it where everyone can see it all through out the day and I put a marker with it. I told them both if there is not a check mark beside something then just do it. We will see how it goes, thus far I am the only one checking things off list, but I hold out hope for a bright new cleaner house with their help.


Materials:

One cheap picture frame from walmart
1 Printed chore list (I did notice after I did mine that I missed under daily "dishes")
I made my chore list use power point.
1 marker, I noticed that all the markers I tried were too light other than the Sharpe black
1 Nail, hook, tac (I used a tac because that's all I could find right at that moment)



How To:

Step One:

Take the glass out of your frame

Step Two:

Put your list inside of frame

Step Three:

Put your glass back in the frame

Step Four:

Hang on the wall

Pinterest Recipe: The BEST Broccoli cheese soup

I LOVE broccoli and cheese soup and over the years have I have tried many different recipes but none have ever really stuck with me and tasted the way I wanted them to, so in many cases they were a one time recipe.

I came across this one browsing through Pinterest. Now this recipe is kinda pricey because of the cost of Velveeta Cheese but its very much worth it. 


Ingredients:

1 cup chopped onion
2 tablespoons butter or margarine
1 (10 ounce) can cream of chicken soup
1 1/2 cups milk
1 lb Velveeta cheese, cubed
1 (10 ounce) package frozen chopped broccoli

I make this soup a couple times a year but not nearly as often as I would like because of the cost of the cheese. I normally do a double batch because one is just never enough!!!

DIY key holder

I seen these on Etsy and they sell them for about $15.00 each. I found a link on Pinterest to make your own for about $4.00.

This is super simple and I got everything I needed at the dollarstore and Wal-mart, now I wouldn't hang anything heavy on it but it works great for keys.

I made mine about a year ago and it is still hanging up at the front door.

What you need:

A wooden frame (I got mine at Dollarama)
Staple gun
Fabric (I got mine at Wal-mart in the scrap area)
Fabric glue
Half hooks (As seen in the picture below)


Wrap your fabric right around your frame. I cut slits in the corners and folded the fabric in on itself. I glued the fabric to the corners.
Once I had all the corners glued I stapled the fabric in the middle of each side to assure it wont come apart.









Take your hooks and screw them into the bottom of the frame through the fabric.





I used five hooks equal spaced apart



 Hang it on the wall


Super simple and I love it!

DIY: Clean baked on cookie sheets

My cookie sheets are well used and well loved but no matter how often I clean or what I do to clean they never look like they did when I first bought them of so many years ago. I came across this pin and thought I would give ti a shot.

I am not overly impressed with how well this didn't work. I think for the amount of scrubbing, baking soda and peroxide it took it should have come out better then did it.


 Put about 1/4 cup of baking soda in a small glass bowl and squirt in hydrogen peroxide until it makes a nice paste. Then you rub it on the offending dirt/stain/grease.  Now scrub.  If it doesn’t come off in round one try letting it sit on the stain for an hour then have at it.  Your pan should be sparkling in no time.

Oven Omelet

These are cute, super simple and very convent. Once again it was an idea I found on Pinterest and decided to give it a try.

I used normal eggs not just egg whites and I used milk, just like if I was making a normal omelet. I put green peppers, cheese and ham in mine but you can put pretty much anything you want in them.

What you'll need

  • 4 large eggs
  • 1/4 cup half-and-half
  • 1/2 teaspoon salt
  • Assorted mix-ins (such as shredded cheese, diced vegetables, and cooked and chopped bacon, ham, or sausage)
  • Grated Parmesan cheese (optional)

DIY fruit and veggie wash

I love fruit, I hate how it goes bad so quickly though.

Trolling Pinterest I came across a way to wash fruit that would increase shelf life. Once I saw it and knew I had to give it a try. At first I was worried that it would change the taste of the fruit, but it didn't. It actually worked and made the fruit last longer by about an extra week.


I didn't leave the soft fruit like the strawberries in as long as I did the apples.


Make sure your sink is very clean. 
(UPDATE:  I have been getting a lot of comments about sinks being so dirty.  Sure they can be.  I wash my dishes and clean my kitchen from my sink, so I’m careful to make sure my sink is clean.  Obviously.)

Fill a sink halfway with lukewarm water.
Add 1 cup of white vinegar.
Mix.
Add your fruit. Don’t over fill your sink with fruit.
Soak for about 10 minutes (shorter for berries – about 2 – 5 minutes).
Rinse well.

DIY frozen yogurt dots

Both the kids and myself love these. They are a quick, easy and healthy snack.


So simple to make.

What you need:

A piping bag
Yogurt
Parchment paper
Cookie sheet
Ziplock bags


Instructions:

Fill your piping bag with your favourite yogurt.

Line a cookie sheet with parchment paper.

Start putting yogurt dots onto the parchment.

Put cookie sheet into the freezer when the dots are frozen. About an hour.

Transfer dots to snack bags and put back into the freezer until ready to eat

DIY: Photo transfer to wood

This is such a cool idea, I want to more of these just haven't had the time.

At first I didn't believe that it would turn out but mine turned out nicely.


 What you need:
-A piece of wood (I got mine at Wal-Mart)
-A laser printed copy of your photo, the copy should be the mirror image of how you would like it to appear on the wood. This ONLY works with laser copies. It won’t work with ink jet.
-Modge Podge
-Gel Medium (I used Mod Podge from Michel's)
-A sponge brush
-Scissors to cut out your photo
-A rag to soak your photo
-A cup or plate to pour your gel medium and modge podge into
-A boning tool or plastic card to get the air bubbles out with

DIY: Laundry Scent Crystals

ohhhh how I LOVE the smell of clean laundry! What I love even more are those scent crystals you buy at Wal-Mart and put into the washer when you wash your clothes but they tend to very hard on the pocket book.

Trolling Pinterest (My new favourite hobby) I came across a way to make your own and decided to give it a shot.

Turns out they are awesome and smell just as nice, even better that I can choose from all the fun scents at the Water Bug here in Sarnia.

What a escapade it was trying to find ice cream salt, turns out I couldn't so I used something else. I went to Lablaws (The real Canadian Super Store), looked everywhere couldn't find any so I found an employee to help me out. He looked at me like I had three heads when I asked him what I was looking for and took me to the road salt. So after three employees, who all took me to the road salt, and no one could find what I was looking for I opted for course canning salt. It works well, but I have found the salt at the bulk barn so I am going to use that from now on. I used a whole bottle of scent because well I love things to smell good.

Instructions:

Pour 2lbs of course sea salt into a bowl mix in 20-30 drops of essential oil, like I said I used the whole bottle lol
